Baked Vegetable Chips Recipe

This is a great alternative to chips!!!

Just as addictive and snackable as potato chips, these chips forgo the excess sodium, preservatives and unnecessary
additives.

 Baked Vegetable Chips Recipe

Mixed root vegetables such as potatoes, radishes, beets and rutabagas, thinly sliced (you may want to peel some vegetables such as beets, but with most, you can leave peels on)
Olive oil
Salt and freshly ground pepper
Any herbs you have on hand (optional)
1. Preheat oven to 275 degrees.
2. Toss vegetable slices in just enough oil to thinly coat and sprinkle with salt, pepper and herbs.
3. Line a baking sheet with parchment paper and a single layer of veggie chips.
4. Bake for 10 minutes, then flip and bake another 15 minutes. Check chips every few minutes, until they are crispy but not burnt. Serve warm or cool.

7 Grain Hot Cereal- Bob's Red Mill

A much better alternative to the typical instant oats that I was finding myself eating because of the convenience. This 7 Grain Hot Cereal from Bob's Red Mills takes only a few minutes to prepare and the taste and texture are just perfect!

This awesome cereal is a gorgeous blend of high protein, whole grain wheat, rye, oats, triticale, barley, brown rice, oat bran and flaxseed.

Follow cooking instructions, then I added a 1/4 cup of Rice milk and 1 Tbsp of Agave Nectar, and a sprinkle of cinnamon.  Totally love this nutritious breakfast cereal and its...

My favourite Protein Powders!

Why use a protein powder?

The main reasons are to increase your daily protein intake, assist with putting on lean muscle and reduce body fat. But protein powders have come such a long way since they were first introduced to the market. We no longer need to adhere to the chalky artificial tastes and gassy side effects. Plant based proteins are amazing! They are highly digestible, nutrient dense, completely balanced protein supplement. You dont need to be a vegan or vegetarian either to enjoy the fantastic benefits of these powders.

Here is a list of some of my tried and tested favourites!

This powder is all-in-one, and is a great supplement to your active lifestyle. It contains antioxidants, fibre, probiotics, greens, and of course 15 grams of plant based protein. Also the flavours are all awesome. My favourite is the Vanilla Chai! Mmmm (hint..go beyond the smoothie and sprinkle on popcorn!!)

The recent innovation to Vega Sport Performance Protein comes from the addition of SaviSeed (sacha inchi) protein, a rich, plant-based source of the amino acid tryptophan. Tryptophan is a key component of serotonin production(1). Serotonin—the feel good hormone—helps with the mental aspect of recovery, so you’ll keep the drive alive and be motivated to train again. Take Vega Sport Performance Protein within 30 to 90 minutes of your workout or throughout the day to meet your individual protein needs to recharge and repair so you can do it all again, sooner.

Warrior Blend is an easily digestible protein that is a nutrient filled superfood! The taste is also amazing. I love the Vanilla! (hint...I love this mixed with fresh/frozen berries and almond milk)

The Cleanest Protein Possible®
Harmonized Protein® features a synergistic blend of 5 high quality, New Zealand sourced proteins. It also provides liver and kidney support to ensure that you can digest, absorb, utilize and eliminate without causing any undue stress on your body. All of the ingredients are designed to be in balance and to work in harmony with each other as well as with your body. Harmonized Protein® is professionally formulated and energetically balanced and contains no artificial flavours, colours, sweeteners or preservatives.

My favourite flavour is the All Natural Vanilla, so creamy tasting and there is a hint of creamy butterscotch to it too! Mmmmm

Vegan Sheppards Pie

Sometimes its nice to just have a home cooked meal that is in one dish! I decided to create a favourite classic of mine from when I was younger. This recipe is ultra healthy and soooo much better than I ever could remember!

Vegan Sheppards Pie
  • 2 packages of Yves Ground Round
  • 1/2 sweet onion diced
  • 1 tablespoon olive oil
  • 4 corn on the cobs boiled
  • 5 potatoes boiled/mashed

  1. In a large pan add olive oil and onion, once the onion becomes translucent add the ground round. (set aside)
  2. Cut off the kernels using a sharp knife alongside the corn on the cob (set aside)
  3. Once potatoes are done, a fork goes in nicely, add a tbsp of vegan butter and 1 cup of almond milk, mash until desired consistency.
Layer the 'meat', corn, then the potatoes and bake in the oven at 350 for 30 minutes!

Enjoy!

Ancient Grain Muffin and Loaf

I discovered Grainstorm Heritage Baking Mixes and I am so excited to say they are awesome!

I am usually not too keen on baking mixes as I question alot of ingredients put into the package, however this is a no brainer! Its better than from scratch, all ingredients are natural and follow a clean eating lifestyle.

I added cacao chips (of course) to the mix and when I greased the muffin tin, I used coconut oil.

So easy and so perfect!

Enjoy the simplicity of making from scratch with so little room for error. LOVE IT!

Listening Challenge~Yoga Teacher Training

I am 8 weeks into the Yoga Teacher Training program and am starting to remove an exterior layer of myself that I wasn't aware it existed.

We have been learning about the Yama's and Niyama's (Yoga Ethical Guidelines for building a foundation of skillful living) and have begun journalling about how these show up in our lives and learning to mediate about these issues that arise.

I am not an experienced mediator, so what I found was that I started 'praying' to overcome obstacles and realized that "praying"was actually me speaking and asking for things...but "mediating" was more about quieting my mind and listening.

Totally different and super cool!!  I finally got it!

I am coming to realize that my personality on the mat is who I am off the mat too! This is not exactly stuff I am proud of either!
It's a self discovery like nothing else. I 'rush' to get to my practise and it takes me a while to centre myself and just stop and be with the practice. With a more profound awareness, I find myself in conversations with people and I realize I am not listening...I am not even good at pretending to listen either...and in fact, I am aware that they know I am not listening too! Yikes, what is this...oh my..."Just stop thinking, quiet the mind and listen".

Or I am in auto pilot...just going through the motions, mindlessly. Oops, I ended up driving to the gym instead of daycare?!? Oops I just finished my lunch and cant remember tasting it...and I am still hungry?!

And sometimes worrying about things I cant control.

WOW! So here I am, a human being in need of Yoga every minute of my life. Not just on my mat. This is so much more than a physical practice.  I need more union and connection to myself and others. I am prepared to put that mirror up and face myself and focus on grounding my thoughts, and becoming much more present. And recognizing that when I am not present, to be honest about that too.

Thanks for listening!

Namaste!
