Homemade Granola Bars!

Homemade Granola Bars


ngredients
  • 1 1/3 cups quick-cooking (not instant) rolled oats, divided Just a pinch each;  fine salt, ground cinnamon, ground nutmeg and ground ginger.
ADD INS: (You can pick anything you fancy, you will want it to equal 1 cup- 1 1/2 cups) and roughly chopped...
  1. *1/4 cup flax seeds, sunflower, or chia seeds, (you can try all to equal 1/4 c)
  2. *almonds and dried cherries, makes a great combo
  3. *apricots and walnuts, another great a great combo
  4. *berrie mix of blueberries, strawberries, and cranberries (Trader Joe's carries this)
  5. *crisp-rice cereal, natural and whole-grain
  6. *unsweetened shredded coconut
  7. *1/4-1/3 cup mini chocolate chips, (OPTIONAL)
  • 1/4 cup canola oil
  • 1/4 cup good quality maple syrup
  • 2 tablespoons brown rice syrup
Directions
  1. Preheat the oven to 350ºF. Line a 8” square baking pan with parchment paper, letting some paper hang over the sides Easy clean up too. :)
  2. Grind 1/3 cup of the oats in a food processor until powdery. Add them to a large mixing bowl with the remaining oats, the salt and spices, seeds, and fruit/nut/crisp cereal of your choice, and mini chocolate chips if using. In a smaller bowl, whisk together the wet ingredients and then stir them into the dry ingredients.
  3. Put the mixture in the prepared pan, smoothing the top with a rubber spatula. Bake for 20-30 mins, or until evenly browned. Remove from oven and let cool for about 15 minutes. Remove to a cutting board and cut into individual granola bars.

5 ingredient NO BAKE Vegan Date Squares!

Crust:
  • 1.5 cups whole raw almonds
  • 1.5 cups regular oats (for Gluten-free, use GF oats)
  • 1/2 tsp kosher salt
  • 10 Medjool dates, pitted and roughly chopped
  • 1/4 cup coconut oil

Date filling:
  • 25 Medjool dates, pitted and roughly chopped (~2.5 cups)
  • 1/2 cup water

Directions:
1. Line a square pan (I used 8in x 8 in) with two pieces of parchment paper going opposite ways. In a food processor, process the almond, salt, and oats until a fine crumble forms. Now add in the dates and process until crumbly again. Melt the coconut oil and add to the mixture and process until sticky. You can add a tiny bit more oil if the dough is too dry. I didn’t need to though! Remove from processor, set aside 3/4 cup of the mixture for later, and press the rest of the mixture very firmly and evenly into the pan.
2. Grab your pitted and roughly chopped dates and water and process in the food processor until a paste forms. You will have to stop and scrape down the sides of the bowl often. You can add a tiny bit more water if needed, but you want the paste quite thick. Scoop out the date mixture onto the crust and gently spread with the back of a wet spatula until even.
3. Sprinkle on the 3/4 cup of mixture you set aside and gently press down with fingers. Refrigerate in the fridge until firm for at least 1 hour, preferably overnight. Cut into squares and serve. Store in the fridge or freezer.

I read this article this morning while having my breakfast, and was a bit shocked as I read through about some of the dangerous 'addictive' things that we eat that over stimulate our brains. I have listened to all of Dr.Boers C/D collections and he is knowledgeable and very thorough.

Bad Dietary Practices that Over stimulate the Brain

What should we feed the brain and body? The basic five are these:
  1. Purified drinking water (Waterwise 8800)
  2. Five to ten servings a day of high-nutrient vegetables and fruit—with a predominance of vegetables, taken in whole or blenderized form
  3. Whole grains
  4. Organically raised meats (with very little red meat) and fish from pure waters
  5. Adequate intake of all the vitamins and minerals necessary for health—usually only possible by taking high-quality, high-potency supplements. Studies have documented that even minor deficiencies of certain vitamins and minerals can cause delinquent, disruptive, and even criminal behavior. (Health Master’s Ultimate Multiple Vitamin)

What must we keep out of the brain and body? These are the basic five to avoid:
  1. Large amounts of sugar. Foods that are high in sugar or high glycemic foods that easily convert to sugar can result in reactive hypoglycemia that gets progressively worse over time. Patients are often amazed that their heath issues are completely resolved when they begin to eat a hypoglycemic-controlling diet. Hypoglycemia causes large amounts of glutamate to be released in the brain—and this is a major cause of addictive behavior.
  2. High glycemic foods (white breads, processed carbohydrates, potatoes, corn)
  3. Omega-6 oils (now called N-6 oils), including corn, soybean, safflower, and other vegetable oils. These oils increase brain inflammation. Choose instead cold pressed extra-virgin olive oil and extra-virgin coconut oil.
  4. All additives and food dyes—including MSG, hydrolyzed proteins, and other substances listed later in this report
  5. Alcohol

Silk-True Almond


I am a big fan of Almond milk, and used to buy the boxed shelf versions. Now they are seemingly more popular and you can buy them fresh in most grocery stores! My new favorite it the DARK CHOCOLATE. Like seriously this is sweet heaven. It is quite sweet, so I usually mix both kinds 50/50 unsweetened and dark chocolate to my cup or cereal!

Healthy Quinoa Cookies



Ingredients: Organic Royal Quinoa flour, tapioca flour, rice flour, canahua flour, non-hydrogenated pal fruit oil, sugar cane juice, brown sugar, Quinoa pop grains, sodium bicarbonate, orange peel.

Even though I have been feeling sick...there is still a special sweet tooth for quinoa cookies that I just have to have!! I found these cookies at the NEW Commisso's Grocery Store in Niagara Falls. This may be my favorite Grocery store of all! It has the largest selection of gluten free and healthy choices that are hard to find!

While I was shopping there, I asked one of the employees a question about a brand and product that I was looking for, and he pleasantly responded, this is something we were considering, we will bring it in and give it a try! How nice!! 


I am on Day 6 of getting over my sickness, and after visiting the doctors yesterday he said, I have a very bad sinus infection. That would explain my achy brain! I have never felt that before. I actually felt my brain throbbing!!


I am bundling up now to take Harley out for a walk and get some fresh air!!

Millet Rice Cereal!


One of my absolute favorite ways to start the day is with a bowl of Millet Rice Cereal. (You can find this at most grocery stores now in their health food section).


I always sprinkle a little cinnamon on top and add Almond Milk.

If I just had a good workout, I add a scoop of protein powder, but seeing that I have missed the gym for a couple of days due to this throat/chest infection. I skipped the protein today. I really hope that I can make it back to they gym tomorrow!!! I need to workout! My mind wants to, but my body says...sleep...sleep...sleep!


Well, its finally FRIDAY! I am off this weekend, and we are anticipating to finish our renovations for Chloe's room! So excited!! Its going to be perfect, just like her! :)

The only error that I made with these lovely little cookies...is that while inhaling the little bag of them, I started reading how many were in a serving!! 2...not 6?? What?? OOPS...and there it was too late to do anything about it!! 


Although I tripled the serving, I still didn't feel that guilty! I mean, they were little and delicious! When you eat gluten free, you realize how light these foods really are, so when you over do it. You don't have that same heavy sunken feeling.

23 weeks pregnant


So I have reached 23 weeks pregnant and this picture was taken a couple of days ago...b.s (before sick!!)
What I look like today is for only Ronnie to know! Love...it sees past all!! 

Well I developed a fabulous cold, a Throat and Chest infection! I am drinking tons of fluids to flush it out! Being sick and pregnant is the worst! You feel worse for some reason, and guilty too! I am sipping on hot water with lemon and honey...its soothing, but its day 2 and I really want to feel better now! So its a quick post to say...HELLO and I'm a bit sleepy today so back to bed I go. 


Ahhh...relief Pure Honey, Hot Water and Lemon! 


I cant even get Harley out of bed today!! Did you look outside today??? What the?? Must be the last of the winter storms that we got overnight! YIKES...It looked like spring yesterday!!! Today is a typical winter day! YUCK!


Back to bed!!! I hope when I wake up this snow is all gone!! :)

Gluten Free Chocolate Chip Muffins


Gluten Free Chocolate Chip Muffins
  • 1 package of El Peto's Muffin Mix
  • 1/2 cup of Earth Balance Whipped Butter
  • 1 organic egg
  • 1/2 cup of Organic Chocolate Almond Milk
  • 1 package of organic cacao chips
Mix all ingredients together, adding the cacao chips last. 
Bake in oven at 350 for 15-20 minutes! ENJOY!!!

What are we eating???



So, although I am Canadian...I have to think that these statistics are somewhat relative to Canadians as well. This is a rude awaking, to not be so average and realize that WE own the power to make the best decisions for our bodies and lifestyle.

I have a saying that is commonly heard from me when people critize the amount of money I spend on quality foods. "PAY NOW OR PAY LATER". I believe in buying the best quality food that I can afford. I live within my means, and ensure that I am fueling myself with what my body needs. I prefer not to buy hormone induced meats, dairy, vegetables, and fruits. I choose to eat as natural as I can.

Baby and Harley


Loving my little love bug! She is so wonderfully snuggly and so loyal to Ronnie and I. Everyone keeps telling us that Harley is going to be jealous when the baby arrives...I disagree. Harley is part of the family and will be part of the baby's life. She will love the fact that we may be home more often, more walks (cuz Mama is going to need to get out more!!) and new family member to love. I think she will welcome our baby girl with full snuggles! 



After a really tough workout, Weight Training, Pilate's, and Power Walk (3 hours in total!!) I am heading to get a full body massage today. Ahhhhh....relief for my achy muscles. I am proud of myself for sticking with my workouts, but it is frustrating on the days that my body wants to sleep and sleep and sleep!  I guess this baby making stuff is tiring!!??!! The biggest difference that I am noticing in my body is the extra fluids I am carrying. Its as though I am one big bloat! My muscles seem softer and my legs seem more like jelly than muscular! What the heck! I am certain all this cant be fat!! I am eating really well....maybe an extra scoop of peanut butter here and there.... Oh well, the body will prepare itself for the magic of labor! I can honestly say...I am scared out of my mind for the actual birth!! Ronnie tried to show me some videos and read about it and I just freaked..."nope, dont want to know...." I think, not sure if this is going to work out in the end...but I think that the less I know about the pain, the less I will perceive it to be painful!! Therefore, naive is the way to go!

Our baby girl!!

Well...there  she is!!! Active in my belly!! Those little arms and legs are beginning to find her kicks and punches! She is a busy body already!

I am getting more and more excited, but at the same time, the weight gain is getting harder and harder! Going up stairs at my house today took my breathe away!! Wow!

I am joining Pre-natal Yoga tonight and hope to gain new friends and a great place to spend some time with me and baby.

20 weeks pregnant!

I cant believe how quickly time flies! I am halfway there!! 20 weeks pregnant and in my 5th month. So far I have gained about 15 pounds and from this point on I have heard that I should gain a pound a week!!! That being said....woo-baby...I am going to grow. I already dont like the feeling of being heavy...and this is only the beginning!!


I have still been maintaining my workouts which are averaging on 5-6 days a week. I have alot more energy this trimester and am learning to go with it. My appetite is also up!!

I have been a bit more lax in my eat clean routines, but I am changing that now. I am trying to focus a bit more on the nutritional balance my body needs. The food I feed me feeds my baby. I cant believe it, still!! I am pregnant!! Ha! I know...its been a little while to get used to the idea, but its just still so amazing.

I can also tell you that Ronnie has been absolutely incredible!! He has always been a great husband, but now with a baby on the way...his love for me is grown so much deeper and I am so grateful for it!! This little baby will be smothered with love!

The other night, he made me this spinach salad...mmmm!


Mixed greens with spinach, raspberry yogurt dressing, chopped yellow pepper, cranberries and cashews...oh and for my salty love....a huge green olive wrapped in cheese!!!
