My Quinoa Bean Medley concoction!
- 1 Cup of cooked Quinoa (cooled)
- 10 pieces of sun dried tomatoes, diced and drained
- 1 can of bean medley (rinsed)
- 2 celery stalks chopped
- 1/3 cup of Organic Balsamic Vinegar
- 1/3 freshly chopped dill
- 1/4 freshly chopped parsley
- 1/2 tsp of sea salt
- 1/2 tsp of cracked black pepper
Toss all ingredients in a large bowl and serve!!! This dish stays well in the fridge, so feel free to make a big batch and use a side dish all week!!!
