Healthy Strawberry Banana Muffins and Strawberry Bread!

 Its strawberry season and I love these berries!! I have to admit that I am not a fan of California Berries, they just seem over grown and tasteless. When our local strawberries are in season (NOW) its my favorite time of year! They are so perfect as a snack and to bake with!

Spelt Strawberry Bread

Yields: 3 loafs


INGREDIENTS
  • 2 Cups of local fresh strawberries
  • 3 1/8 cups of spelt flour
  • 2 cups of organic cane sugar
  • 1 Tbsp of cinnamon 
  • 1 tsp of salt
  • 1 tsp of baking soda
  • 1 1/4 cup of unsweetened organic applesauce
  • 4 beaten eggs
Combine everything but the berries, eggs and applesauce, then add these at the end.

Pour into 3 loaf pans (lightly sprayed) 
Sprinkle a little oatmeal on top for fun!

Bake at 350 for 45-50 minutes

This bread is so moist and tasty! It was a hit with Ronnie! 


 Spelt Strawberry Banana Muffins


INGREDIENTS

  • 2 eggs
  • 3/4 cups of unsweetened organic applesauce
  • 3/4 cup of sucanat
  • 1 tsp of pure vanilla extract
  • 3 ripe bananas mashed
  • 2 cups of spelt flour
  • 1 Tbsp of cinnamon
  • 1 tsp of baking soda
  • 1 cup of fresh local strawberries
Combine all dry then add wet ingredients, mix well and really mash those strawberries in! I used a potato masher! :)

Pour into a muffin pan that is lightly sprayed 

Bake at 375 for 20 minutes
