Pumpkin Spelt Bread with Apricots

This is my favorite time of year for baking, and pumpkin is one of my favorite ingredients to bake with. Its so versatile and has many health benefits.


This is a bread recipe that I created and just may call my favorite! So delicious and best of all it is healthy!!! 



















Here is a picture of the overall ingredients I used to create this yummy bread!


Combine below wet ingredients in one large bowl

  • 1 1/2 cups of organic apple sauce
  • 1 can of organic pumpkin
  • 2 eggs, 2 egg whites (free run)
  • 1/2 cup of organic skim milk
  • 1/3 cup of organic molasses
  • 2 teaspoons of pure vanilla extract
In a separate bowl, combine the below dry ingredients
  • 3 1/2 cups of organic spelt flour
  • 1 3/4 cup of organic cane sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon each of ground nutmeg, ginger, mace and cloves
  • 1 cup of chopped organic chopped dried apricots 
  • 1 cup of chopped pecans (unsalted)
Gradually add the wet ingredients to the dry ingredients. Ensure that it is well blended. 

Pour into 3 loaf pans that are lightly greased ( I use a organic coconut spray to coat the pans lightly)

As for my little topping, I sprinkled pumpkin seeds, oatmeal, wheat germ and ground flax.

Bake int the oven for aprox. 45 minutes at 350, cool for 15 minutes before removing from loaf pans, and ENJOY!!!!!

Apple Cider Vinegar

The above brand is the one that I have personally tried. When buying your apple cider vinegar, it is important to ensure that it is RAW, UNFILTERED and

Vegetarian Bean Chili

Its that time of year, when comfort food makes us warm and feel content. We dont have to let our comfort food get us "un"comfortable! Here is a great alternative to the high fat meat chili! Its a great way to load up on veggies and fiber!




In a large wok or pan, I use a tablespoon of olive oil and add:



  • Chopped Sweet Onion
  • Chopped green pepper
  • Diced Zucchini
  • Can of organic chickpeas
  • Can of organic kidney beans



Once the veggies are cooked 1/2 way through, I add a can of organic diced tomatoes, then finally I add YVES Veggie Chili and a few extra tablespoons of chili powder! Stir it all together and let simmer for 10-15 minutes.


Pour over steamed brown rice and enjoy a healthy veggie chili today!!! 




I also added a sprinkle of shredded almond cheese

This is a healthy cheese alternative that is low fat and high in calcium.

Raw Cashew Dream Cake

Over the Thanksgiving holidays, my cousin made this amazing Raw Cashew Dream Cake!!
It was delicious!! Personally I would change the topping to less berries, and maybe drizzle maple syrup over top. It would complete the nuttiness of the cake!

Raw Cashew Dreamcake
Ingredients:
Crust:
1/2 cup raw almonds (pecan or walnuts will also work)
1/2 cup soft Medjool dates
¼ tsp. sea salt

Filling:
1 ½ cups raw cashews, soaked for at least 5 hours, overnight is best
juice of 2 lemons
the seeds of 1 whole vanilla bean (or 1 tsp. alcohol-free vanilla extract)
1/3 cup raw coconut oil, melted
1/3 cup raw honey (solid or liquid.)(Vegans use agave nectar.)
1 cup raspberries (thaw completely if using frozen)

Directions:
1. Place nuts and dates in a food processor with sea salt and pulse to chop until they are to your desired fineness (process a finer crust longer than a chunky one). Test the crust by spooning out a small amount of mixture and rolling it in your hands. If the ingredients hold together, your crust is perfect. Scoop out crust mixture in a 7” spring-form pan (if you don’t have a spring-form pan, use a pie plate lined with saran wrap), and press firmly, making sure that the edges are well packed and that the base is relatively even throughout. Rinse food processor well.
2. Warm coconut oil and honey in a small saucepan on low heat until liquid. Whisk to combine.
3. In the most powerful food processor / blender you own (you decide which one has the most torque) place all filling ingredients (except raspberries) and blend on high until very smooth (this make take a couple minutes so be patient). If you have a Vita-Mix, absolutely use it.
4. Pour about 2/3 (just eyeball it, you can’t make a mistake!) of the mixture out onto the crust and smooth with a spatula. Add the raspberries to the remaining filling and blend on high until smooth. Pour onto the first layer of filling. Place in freezer until solid.
5. To serve, remove from freezer 30 minutes prior to eating. Run a smooth, sharp knife under hot water and cut into slices. Serve on its own, or with fresh fruit. Store leftovers in the freezer (what leftovers?).

Banana Chocolate Chip Bread


 I found these grain sweetened chocolate chips at a health food store in the States! They were perfect for baking with!!
 I like to use 1% Natural Plain Yogurt in my baking...it makes the dish moist yet light!

 All ingredients mixed....


I spray my bread pans with Coconut Spray Oil. It is natural and much better for you than the traditional baking sprays.

Ahhhh....my house smells like a bakery!!!




Here is my recipe that yields 3 loafs.

DRY

2 cups of spelt flour
1 cup of whole wheat flour
1 cup of amaranth flour
1 cup of organic cane sugar
2 Tbsp of baking powder
2 tsp of cinnamon
1/2 tsp baking soda

MIX ABOVE DRY INGREDIENTS IN A SEPERATE BOWL

WET

8 egg whites
2 cups of ripe mashed banana's
1 cup of skim milk soured with 2 tbsp of lemon juice
1 cup of  plain 1% yogurt
2tsp of vanilla
1 cup of chocolate chips ( I used the grain sweetened kind)

MIX ABOVE WET INGREDIENTS IN A SEPERATE BOWL

Combine both  and mix well, pour into sprayed loaf pan.

Bake for 55 minutes at 350
