Eat Clean Beef Stir Fry

Eat Clean-Beef Stir Fry

Ingredients (serves 4)
  • 1 cup quinoa
  • 1 tbsp olive oil
  • 1 cup chopped yellow onion
  • 3 cloves garlic, minced
  • 1 each yellow, orange and green bell pepper, chopped
  • 1 cup chopped roasted red pepper
  • 1lb of lean beef tenderloin, trimmed of visible fat and cut into thin strips (get this from your butcher/deli)
  • 1 cup of low sodium beef broth
  • 1/4 cup chopped fresh basil
  • Sea salt and fresh ground black pepper, to taste
Instructions
Cook quinoa according to package directions and set aside
Meanwhile, heat oil in a large skillet on medium-high.
Add onion and garlic, cook 2-3 minutes
Add peppers (including roasted red peppers), cook 2 more minutes
Add beef and cook for another 2 minutes
Add broth and simmer over the same heat for 2 minutes
Remove from heat, stir in basil and season with salt/pepper.
Serve beef mixture over quinoa
