Baked Vegetable Chips Recipe

This is a great alternative to chips!!!

Just as addictive and snackable as potato chips, these chips forgo the excess sodium, preservatives and unnecessary 

 Baked Vegetable Chips Recipe

Mixed root vegetables such as potatoes, radishes, beets and rutabagas, thinly sliced (you may want to peel some vegetables such as beets, but with most, you can leave peels on)
Olive oil
Salt and freshly ground pepper
Any herbs you have on hand (optional) 
1. Preheat oven to 275 degrees.
2. Toss vegetable slices in just enough oil to thinly coat and sprinkle with salt, pepper and herbs.
3. Line a baking sheet with parchment paper and a single layer of veggie chips.
4. Bake for 10 minutes, then flip and bake another 15 minutes. Check chips every few minutes, until they are crispy but not burnt. Serve warm or cool.

Clif Energy Bars

I love these bars!!! Clif energy bars are soft and chewy and full of flavor!

2 newest flavors are the White Chocolate Macadamia Nut and Chocolate Chip Coconut. Wow, they are awesome!!! They are a good source of protein and fiber and made with 70% organic ingredients.

I had these as pre-work out snacks prior to a long distance run and they sustained me perfectly!!!

7 Grain Hot Cereal- Bob's Red Mill

A much better alternative to the typical instant oats that I was finding myself eating because of the convenience. This 7 Grain Hot Cereal from Bob's Red Mills takes only a few minutes to prepare and the taste and texture are just perfect!

This awesome cereal is a gorgeous blend of high protein, whole grain wheat, rye, oats, triticale, barley, brown rice, oat bran and flaxseed.

 Follow cooking instructions, then I added a 1/4 cup of Rice milk and 1 Tbsp of Agave Nectar, and a sprinkle of cinnamon.  Totally love this nutritious breakfast cereal and its...

Run recovery salad!

After a great Yoga practice and a beautiful run in the sun with the snowy view today I am enjoying a spinach salad loaded with healthy fixins to aid my muscles in recovery!

Run Recovery Salad
  • large handful of spinach 
  • large handful of romaine lettuce  
  • 2 tbsp cranberries
  • 10 almonds
  • 10 cashews
  • 10 pumpkin seeds
  • 3 tbsp of hulled hemp seeds 
  • 1/4 cup of cooked brown rice 
  • a sprinkling of goats feta (not sure how much....maybe 2 tbsp?) 

Dressing: Sea Salt, Cracked Black Pepper, Aged Balsamic Vinegar, Olive Oil

My favourite Protein Powders!

Why use a protein powder? 

The main reasons are to increase your daily protein intake, assist with putting on lean muscle and reduce body fat. Vegetable Ravioli Soup

Its cold and looks like winter is finally upon us! Not bad considering its February 3rd! Ahhh love the look of winter from inside our home!

So its all about homestyle vegetarian soup with whole grain ravioli to warm our bellies and nourish our bodies!

Put all ingredients except for the pasta in a large pot and bring to a rapid boil. Then reduce and simmer for about 1 hour then 5 minutes prior to serving bring back to a boil add the pasta cooking for about 5 minutes. 

Serve and Enjoy!

Vegan Banana Chocolate Chip Bread Pudding

One dish Vegan Banana Chocolate Chip Bread Pudding dessert...oh my! If you have a craving and day old bread t...then give this easy bread pudding recipe a go! Its easy and pleases your sweet tooth without any guilt!

  • 2 1/2 cups of almond milk
  • 1 tsp of vanilla extract
  • 2 tbsp of arrowroot powder
  • pinch of sea salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 cup of coconut palm sugar
  • 2 tbsp of yacon syrup (or molasses)
  • 2 bananas
  • 1/2 cup of chocolate chips (dairy free)
  • 3/4 loaf of bread (I used red fife bread, any will do!)
Combine all ingredients except bananas, chocolate chips and bread, whisk together until no clumps from the arrowroot powder, then add the remaining ingredients.

Let sit for about 10 minutes to get the bread well soaked.

Use a 9x9 dish and coat with coconut oil or vegan buttery spread

 Put in the oven at 350 for 30 minutes and enjoy!! 

What is Yacon Syrup? It is a low GI sweetener that tastes like molasses. Its low in calories and all natural sweetener derived from a plant. It also has prebiotics and is an antioxidant!

Yoga Inspired Quotes!

I am over half way through my Yoga Teacher Training program and I am finding that Yoga is not only when I am on my mat. Its every day and in every moment I am in. This journey is in incredible and the more I embrace it, I discover even more union with my mind body and soul! There have been times when I was uncomfortable about discovering some of my true Self, but it is so humbling to move past it all. I love these quotes, so I thought I would share them with you too!

Vegan Sheppards Pie

Sometimes its nice to just have a home cooked meal that is in one dish! I decided to create a favourite classic of mine from when I was younger. This recipe is ultra healthy and soooo much better than I ever could remember!

Vegan Sheppards Pie
  • 2 packages of Yves Ground Round
  • 1/2 sweet onion diced
  • 1 tablespoon olive oil
  • 4 corn on the cobs boiled
  • 5 potatoes boiled/mashed

  1. In a large pan add olive oil and onion, once the onion becomes translucent add the ground round. (set aside)
  2. Cut off the kernels using a sharp knife alongside the corn on the cob (set aside)
  3. Once potatoes are done, a fork goes in nicely, add a tbsp of vegan butter and 1 cup of almond milk, mash until desired consistency.
Layer the 'meat', corn, then the potatoes and bake in the oven at 350 for 30 minutes!
